What is the difference seeing an onion under a microscope when it is stained by a blue stain and iodine?

Iodine tests for starch, if you looked at a potato too then that makes sense. Typically you will be asked to look at the potato and then the onion. The potato will turn a purplish blue and positive for starch your onion does nothing making it a negative for starch.
