You should have mentioned what ingrediants you do have and whether the chicken is whole or parts. You can brown it, then slow cook in skillet w/tomato sauce (chicken cacciotore) or season and bake it in oven (ie: lemon/garlic)Serve w/rice or orzo flavored w/chicken stock. You can stew it w/roasted vegetables, chicken soup, or a hearty chicken salad just to name a few. You're only limited by your imagination.
